- Three teaspoons of vanilla extract
- Half a cup of coconut flour
- One cup of coconut milk
- Four eggs
- Half a teaspoon of table salt
- One tablespoon of raw honey
- Coconut oil (for frying)
- Preheat pan or griddle over medium to low heat.
- While waiting for preheating, beat eggs in a bowl until they are scrambled. Mix in coconut milk, vanilla and honey.
- In a seperate bowl, whisk together the coconut flour, baking soda and sea salt. Then whisk your previously made liquid mixture into this until they are fully mixed.
- Grease pan with coconut oil. Pour a few tablespoons of the batter on the pan for each individual pancake, making sure to give them enough space to grow as they cook.
- Cook for a few minutes on each side, until pancake is brownish-gold.
- Serve with fruit, honey or maple syrup.
